In March of 2011, I decided I wanted to make the transition to become healthy, free of carcinogens ingested from food and ultimately cruelty free. Here I will post pictures and recipes of my adventure to cut out the use of animal products from my diet and lifestyle. April 2, 2011 - Vegan (mostly) Tacos
Today I made mostly vegan tacos. I say "mostly" because I'm sure the corn tortillas I used to make the shells aren't vegan, but it's what I had on hand. I used Yves Taco "Meat", Follow Your Heart Cheddar "Cheese", Tofutti "Sour Cream", tomatoes, and avocado. The cheese did melt, but coagulated again very quickly leaving a weird gelatinous glob. The meat, cheese and sour cream individually taste pretty bad, but together I was surprised at how good they taste. The "cheese" doesn't have the feel of dairy cheese and I think that threw me a little bit. The flavor of the tacos was good, but I think I expect the replacement products to taste just like what they're replacing. The "cheese" doesn't taste like cow's cheese, etc. I have tasted vegan sour cream that tasted EXACTLY like dairy sour cream...I'll have to ask my roomie abut that one. I have to say that the best part of my tacos were the fresh tomatoes and avocado (not to mention the non-vegan, oil fried shells). Perhaps I'll mostly stick with non-processed foods and who knows, maybe I'll take this as far as to become a raw foods vegan.
